{Nutrition at MusicFest – Part 4} Cook’s Corner

For those of you who are on a budget, crave a homemade meal fresh off the slopes, or are secretly channeling Emeril this post is for you. I’ll admit, I am a little of all three.  If you are staying in one of the condos for MusicFest there is a good chance you will have a slow cooker (aka Crock Pot) in the kitchen…put it to use!  Slow cookers conveniently braise or stew meats and vegetables all day while you are enjoying the Colorado Powder and provide you a hot meal upon returning from your play.  It really is a smart way to go for MusicFest. Although Top Ramen may be tempting it lacks the protein and nutrients needed to keep you going strong for the week.

The key to planning a menu when you are traveling is to look for recipes that are simple with few ingredients. Plan ahead so you can bring spices from home. Small containers, similar to film canisters (all of you born in the ’90s see link for explanation) or zip top bags are great for storing individual spices or spice mixes for the recipes. Once you reach Denver, stop off at the Wal-Mart (near airport–directions) or head into Steamboat Springs and check out these grocery stores:

In-Town Grocery:
City Market (if you are looking for gluten free–stop here!)

For your convenience I have put together some meal suggestions, complete with recipe links, list of items to buy in Denver or Steamboat, and suggested items to bring from home.  The recipes are simple, meant for those who are traveling, and taste great! They are not 100% “healthy,” however, they beat the pants off a fast food!

Carnitas Tacos & Tossed Salad

Buy in Steamboat:
  • Pork loin roast
  • Onion
  • Lime
  • Orange
  • Cilantro
  • Corn tortillas
  • Salad items
From Home:
Garlic cloves, Chili powder, Oregano

Beef Stroganoff

Buy in Steamboat:
  • Sirloin Steak
  • Condensed Golden Mushroom Soup
  • Onion
  • Sour Cream
  • Cream Cheese
  • Mushrooms
  • Worcestershire Sauce (or bring from home in a plastic container)
  • Egg Noodles
From Home:
Garlic powder for seasoning meat

Sausage & Lentil Soup

Buy in Steamboat
  • Chopped onions, carrots, celery
  • Lentils
  • Kielbasa
  • Chicken Broth
  • Canned Tomatoes
  • Spinach
From Home:
Cumin, Coriander, & Bay Leaf

Fiesta Corn Chowder

Buy in Steamboat:
  • Frozen Southwestern Corn Mix
  • Fiesta Cheese Soup
  • Cilantro
  • Chicken Broth
  • Chicken
  • Oreida Frozen Potatoes
From Home:
Nothing
If you are not interested in recipes, consider quick cooking ideas:
  • Spaghetti sauce + pasta + sausage or meatballs (frozen) + salad
  • Top Ramen + spinach + carrots + egg (scramble & add just before serving)
  • Peanut Butter & Jelly + fruit salad
  • Lentil soup (canned variety) + spinach + carrots + sausage
  • Buns + ground beef + sloppy joe mix or packet + salad
  • Eggs + bacon + frozen biscuits + orange juice

If you plan ahead you’ll eat better, feel better, and save money.

(As you may note, I did not include Chili–far too controversial of a recipe to include–beans or no beans, chuck or ground, etc! Beans are a filler and if you are on a budget or health conscience then go for the beans! Regardless, I’ll definitely whip up some Frito Pie while at MusicFest!)
